First, rub the whole pork trotter with salt, pepper, herb de Provence and garlic powder. Place the pork trotter in the pot. Scattered chopped onion around it. Add coconut aminos and heavy cream around it. set on high to cook for 4.5 - 5 hours.
When is done, use a big spatula to lift the whole pork trotter onto a platter. Sprinkle with parsley and share among your dining partner.
