Cocoa Mascarpone mousse

- 2 teaspoons 100% dark cocoa powder, unsweetened, plus more for sprinkle
- 1 tablespoon hot water
- 1 whole egg
- 2 egg white
- 2 teaspoon Xylitol sweetener
- 8 oz Mascarpone cheese, soften in room temperature
- Add cocoa powder into a cup and add hot water. Stir to mix them well until cocoa dissolved. Set aside.
- In a small mixing bowl, add the egg, egg whites and Xylitol. Using an electric mixer beat eggs until fluffy.
- Fold softens mascarpone cheese into egg. Half way through folding, add cocoa and mix them together.
- Divide Cocoa Mascarpone mousse into 4 ramekins and sprinkle with cocoa powder. Set in the refrigerator for one hour before serving.
