Heat a medium size pot with water. When water starts to boil, add the pork belly to cook for 5 - 10 minutes. While boiling, use a ladle to skim off the scum around the top of the water.
Reduce heat to low and let it simmer for about 45 minutes, until the pork belly is tender.
When the pork belly is tender, add cabbage and fill up with chicken broth to the level of the cabbage. Bring to simmer for another 30 minutes, or until the pork belly soften to the consistency you desire.
When the soup is ready, season with salt and pepper to taste. Stir in a teaspoon of roasted sesame oil and some parsley. Ready to serve.
