Ingredients
  • Blackened Seasoning ingredients:
  • 1½ tablespoons paprika,
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon ground dried thyme
  • ½ teaspoon ground white pepper
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon ground nutmeg
  • ¾ teaspoon ground cumin
  • 2 fillets (5 oz) each of white fish
  • Sprinkle of salt
  • 3 tablespoons butter
Preparation
  1. Combine the paprika, garlic powder, onion powder, ground dried thyme, ground white pepper and black pepper, cayenne pepper, dried basil, dried oregano, ground nutmeg and ground cumin in a bowl. And mix them together with a spoon. This makes about ¼ cup of spices. Keep the remainder in a jar for later use.
  2. To prepare blackened fish; rinse and pat dry the fish with paper towel. Sprinkle fish with salt on both sides and lightly rub it on.
  3. Using a non-stick skillet, melt 3 tablespoons of butter over low heat. When the butter is melted, place the fish in the pan, flipping it over to coat both sides with the butter.
  4. Generously, sprinkle the top of the butter coated fish with the blackened spice, flip over and turn up the heat to medium. Let the fish sear for 3 minutes or until blackened and somewhat crispy. While searing, coat the top side of the fish with the blacken spice.
  5. When the underside of the fish is blackened, flip it over and sear the other side until blackened, somewhat crispy and fish is cooked. About 3 minutes depending on the thickness of the fish. Test the fish doneness with a fork. If it pierce through easily it is cooked through.
